Yes, any hardcore tech info about GUS pats will be hard to find
these days.

That is mainly why I suggest to go with sf2 because dealing with
GUS pats is a lost cause. Even if you find adequate documentation
it will then become an issue of tools to assemble and modify GUS
pats. If you focus on sf2 then there are at least some GUI apps
to create new soundfonts and banks, and there are uptodate forums
to ask for assistance (albeit in the windows world, but they exist).
